THE HATCH ★ ROTISSERIE & BAR
The Hatch is a simple rotisserie and bar located just off the town square in beautiful Paso Robles Wine Country. We are fueled by wood fire, small batch whiskey, and a bustling atmosphere full of mingling locals and visitors. The restaurant is intimate and seating is a mix of banquettes for couples, high wood tables for groups, and tall backed stools at the bar for those who like front row interaction with some of the best in the cocktail biz. Take a stroll down 13th Street and you’ll find an appealing mix of tasting rooms, a coffee shop, an ice cream window, and live music on many weekend nights.
The Hatch was founded in the spring of 2015 by Maggie Cameron and Eric Connolly who had envisioned a cozy, comfortable joint with great food, interesting cocktails, and weekend late night dining. Those two had lived in Paso long enough to recognize a need in the downtown dining scene so they quit their day jobs (in wine and restaurants) when the opportunity arose to open The Hatch in one of their favorite spaces in the historic Grangers Union Building. Today you’ll find a mix of wine industry professionals, brewers, and visitors from all over California and beyond chatting at the bar, enjoying a mid-week cocktail, or sitting down to tuck into their favorite rotisserie special.
The comfort food-driven menu largely changes seasonally while some of the perennial favorites remain with us year-round. Our wood-fired rotisserie is the focal point of our small, open kitchen, and our cooks led by Chef Nick DeShon are always happy to chat with guests passing by the window. Sauces are made in-house daily and Chef Nick oversees longer-term projects as well like our fermented hot sauce, pickled seasonal produce, and house-cured ham. Daily specials like fried chicken, prime rib, and lamb augment the casual but classically-executed menu… come early because they sell out fast!
Craft cocktails, an extensive whiskey selection, and local wine, beer, and cider all round out the dining experience. Cocktail Czar Robin Wolf puts out a seasonally-inspired cocktail list that utilizes fresh produce, juices, and garnishes, and works with Chef Nick to incorporate specialty produce items (like house-pickled fruits and vegetables) into the bar program. We love working with our winemaker friends to offer unique wines typically not available by the glass in restaurants. Each of the wines on our small list are available by the glass or the carafe, and they’re all “on tap” and poured out of kegs. This means that each glass is served at the correct temperature and is preserved in a way that ensures the last glass tastes as perfect as the first. Also not to be missed is our rotating selection of locally produced beer and ciders which provide a refreshing complement to our wood-fired comfort food.

We accept reservations 24 hours a day via the Yelp Reservations calendar below. Please don't hesitate to call us at (805) 221-5727 for parties over 7 guests, or for assistance with your reservation. We also serve a full dinner menu at our 15-seat bar. No reservations are necessary and seating is first come, first served. If the bar is full you are welcome to add your name to our waitlist and opt to receive a text message when your seats are available, enjoying the 13th St and Downtown Paso Robles nightlife in the meantime.
